  • oats – quick oats or instant oats work best
  • peanut butter – Smooth or crunchy works too!
  • honey – This can be adjusted to taste to make sweeter, or less sweet
  • shredded coconut– this adds great flavor and a little texture, but can be left out if you prefer.
  • sunflower seeds – these add a little crunch. They can be left out if you prefer, or swapped with nuts if you prefer.
  • Valentine’s Day colored chocolate candies– Red, white, pink or purple, like M&Ms!
  • sprinkles for fun! optional

How To Make Snack Bites

  1. Cover a baking sheet with parchment paper or wax paper. In a large mixing bowl add oats, peanut butter, honey, sunflower seeds, shredded coconut and chocolate candies. Mix everything well until combined.
  1. Roll mixture into round balls, rolling until about the size of a ping pong ball. You can also use a standard cookie scoop to help you portion the bites. Place each bit on the baking sheet. Roll in sprinkles if desired, or press a few heart sprinkles into each bite.

Snack Bite Variations

Peanut Butter– any kind of nut butter for peanut butter including almond butter, cashew butter, and even sunflower seed butter to make it nut-free!

Chocolate Candies White chocolate, dark chocolate, or even chocolate chips can be used in place of the M&Ms if you prefer. You can also use different flavors of M&Ms.

Swap the Colors– Try green candies and sprinkles for St. Patrick’s Day, or pastel colors for Easter.

Sunflower seeds– Try green pumpkin seeds or nuts like peanuts or cashew pieces in place of sun-flower seeds. The sunflower seeds add crunch and texture.

Coconut– try dried cranberries or dried cherries for a fruitier taste that goes great with the chocolate. You can also leave out the coconut if you prefer.

Can I Skip Chilling The Dough?

Your dough is ready to eat as soon as it is mixed, but will be really soft. It’s best to chill the dough first before snacking so the bites hold their shape. (Taste testing is fine though of course!)

Do I Have To Use A Cookie Scoop When Making These Valentine’s Snack Bites?

You can easily roll these snack bites with your hands. Using a small dough scoop does help to keep the bites consistent in size if you happen to have one.

If you hold the dough too long in your hands, eventually the color on the candies might start to bleed a little from the heat of your hands.

How Long Do These Valentine’s Day Snack Bites Last?

These snack bites will keep for about a week in the refrigerator. Store these bites in the refrigerator in an airtight container with a lid.

This snack can also be stored in the freezer for several months in a freezer-safe bag. You can eat these bites straight out of the freezer, but it’s best to let them soften for about five minutes on the counter so they aren’t as hard.

Quick oats or instant oats work best in this recipe. Steel cut oats are too thick and won’t work very well in this recipe.
If the dough is still too stick you can add extra oats to help the dough firm. Add a tablespoon at a time until the dough easily rolls.
Using a cookie scoop can help you portion the bites quickly and roll the balls evenly. Holding the dough too long in your hands can sometimes make the color on the candies or sprinkles start to bleed from the warmth from your hands.
